For the last few weeks, I have been attempting to make perfect and delicious Sweet Potato Chips. After many failed attempts of soggy messes and burnt-on potato, I finally cracked it. Now I’d say they were pretty easy to crack and now they have become my favourite snack. I have loved sweet potato fries ever since I had them at a BBQ at a South African neighbour’s house. I figured I had to try and make them so I could have them every week.
So, here are my easy steps to Sweet Potato Chip heaven:
1. Peel and clean your potatoes. For best results use a mandoline to slice the potatoes very thin.
2. Allow them to soak in cold water for 10 minutes. Then remove and pat dry with paper towels.
3. Fry in oil heated to around 190c for a few minutes.
4. Remove to a plate lined with paper towels and immediately sprinkle on a little sea salt and black pepper. Before serving sprinkle on a few chopped, fresh herbs.
They are best served warm the day they are made with a BBQ hot dog, beef burger or a chicken burger.
