Last week I chose to skate 6 miles for Sports Relief with Croydon Roller Derby and we raised in the region of £2,500 which I thought was pretty good for the amount of people that actually took part. We each had to do 200 laps each of the circuit track and I did mine fastest in 25 minutes. I was pretty chuffed :)I think I was more happy with the cakes I made for the cake stall though… Me and Green Ranger decided to make an afternoon/evening of making various things; we made Peanut Butter Kisses, Gingerbread men and ladies and Neopolitan Cupcakes.
The Neopolitan cupcakes sold quickest with one kid making off with three in one go and scoffing them down! 😀 They basically consisted of chocolate cupcakes, strawberry frosted icing and white chocolate/vanilla stars and hundreds of thousands. Nom. Then the peanut butter kisses were basically peanut butter cookies, which came out better than expected – they were odd to make – with dollops of nutella on them. Lastly, the gingerbread men/ladies. Couldn’t find a recipe for them so searched the BBC and found this wonderfully basic but yummy recipe, so I thought I’d share it. Best gingerbread I’ve ever made!
Ginger Bread Men and Ladies
350g/12oz plain flour, plus extra for rolling out
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
175g/6oz light soft brown sugar
1 free-range egg
4 tbsp golden syrup
It should take about 30 minutes to an hour to make about 20, I ended up making a fair bit more but they were various shapes. Cooking can also take 10 to 30 minutes, or until light brown and looking smiley 🙂
The recipe was so easy and fun to do, they tasted tremendous and chewy, not crunchy and biscuity. To design them, me and Green Ranger just used writing icing but of course you can use real icing, hundreds of thousands, silver balls, various pick and mix and piping icing. The list is endless and decorating is always the fun part; we made ninjas, magicians and nuns…
