Over the past few weeks, I have been feeling inspired, mainly by lovely ladies on my twitter feed who bake the most fantastic cakes and those who make the most brilliant recipes, mainly vegan ones! They have encouraged me to start cooking and trying new products. So far, it has in no way been a waste of my time. I’ve started off with basic sweet things but first, and as dull as this is, this was my breakfast a couple of weeks ago:
I had a salty pretzel, dorset cereals wild berry mix and chai latte powdered drink and it was distinctly marvellous. I work in a coffee shop, Nero to be precise, and it is a lovely job. I may whine about it and cause I’m a student, not work too often but it is one of the highlights of my week – chatting with the regulars and making customer’s experience as delightful as mine always is. I could sit for a coffee shop in hours; reading, taking photos, writing and working. It’s so relaxing and it feels like home. Somedays I just consider escaping to Brighton and holing up in one allday.
But yes, this chai latte powder wasn’t as good as Nero’s (it’s made with water) but it was still cinnamon rich and warmed my belly in these minus temperatures of late. Pretzels are one of my food loves – they don’t feel greasy, oily or unhealthy – just carbs with tangy salt crunch. Perfect before a run. Lastly, dorset cereal, I’ve never had it before but I picked up this muesli from this company because of the raving about the Gingerbread Porridge they had done. I didn’t regret it, the fruit was soft but dried and complimented the big flakes of muesli and almonds perfectly. I felt like a health-freak eating it and it reminded me of hostels in Europe – there is always that ‘muesli stereotype’ breakfast. I have always loved it and now I can have it at home, it may bankrupt me but what the hell!
I’ve made myself Rainbow Cake and White Chocolate Rice Krispie cakes, I’ve been a bit sugar mad of late. Both turned out amazingly well, if not sickly. I won’t be touching cakes or sugar for a while!
Rainbow Cake looked like this in the making and came out looking nommier and in a heart shape, cause of the tin. I can be cute when I want to be…
I went to make a basic cupcake recipe, that was the plan, until I had no cases, so I changed it into a cake. Then as I normally do, I raided the cupboards for stuff to add to it, normally its green or blue food colouring but this time I steered clear and used vanilla. So, I added hundreds of thousands, not sure if they’d work but they did, then my lovely friend reminded me that’s what rainbow cake is! Then I added chocolate chunks too just for funsises! It came out a wonder – light, fluffy, full of colour and chocolatey. I couldn’t have asked for more!
Then a couple of days ago, me and the boyfriend tried Rice Krispie cakes after days of wanting to – he made milk chocolate and I made white chocolate with marshmallow and Jazzies. I do go wayy too over the top. I should really settle for less is more – they were far too sweet and sickly but a bite at a time couldn’t hurt. Green Ranger has the rest in his fridge at home for lunches…
Now for something savoury… ideas?
